Peanut Butter Chocolate Chip Cookies

1 1/4 cups unbleached all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup natural creamy peanut butter at room temperature
3/4 cup sugar
1/2 cup firmly packed light brown sugar
1 large egg, at room temperature
1 tablespoon milk
3/4 cup chocolate chips
Preheat oven to 350 degrees. In a medium-sized bowl, stir together the flour, baking soda, baking powder, and salt, then set aside.
In a large bowl, beat the butter and the peanut butter together until fluffy. Next, plop in both sugars and beat until smooth. Crack in the egg and mix well. Stir in the milk. Now fetch the dry ingredients and mix in completely with the peanut butter mixture. Stir in the peanut butter chips.
Scoop up rounded teaspoons and roll between your palms into balls before placing on an ungreased cookie sheet. Gently press each cookie with the back of of a fork before popping in the oven to bake for 10 to 12 minutes. Let cool slightly, then eat. Milk optional.

Peanut Butter + Jelly Muffins
(if you want to make these vegan just leave out the peanut butter chips, unless you have a brand that is vegan)
2 cups flour (you can also use whole wheat pastry flour)
1/2 sugar, maple syrup, or other sweetener
2 tsp baking powder
1/2 tsp salt
3/4 cup peanut butter
2 energy egg replacer
1 cup milk (soy, rice, cow etc.)
jelly (we like grape)
peanut butter chips 1/2-1/3 cup
Preheat oven to 350F. In large bowl mix peanut butter, egg replacer, and milk until well mixed. Then mix in flour, baking soda, and salt until you have a thick-ish but well mixed batter. If you like them to be extra sweet/peanut buttery you can add 1/2 cup of peanut butter chips to the batter now and top each muffin with a couple as well. Otherwise just drop a few on the top of each muffin before baking.
Use a tablespoon and scoop one tablespoon of batter into each muffin cup. Once the cups are full you can drop the muffin tin a few times on the counter to make sure the batter coats the bottom of each muffin cup. Using a teaspoon add one small scoop of jelly to the center of each muffin. Aim for the middle or it can run out and turn the edges a bit messy. Then add another tablespoon of batter to each cup. This should make 12 muffins, and the cups do not need to be filled all the way up (they will rise)
Then sprinkle a couple of chips over each muffin and bake for about 20-25 mins until golden brown.
